{thanks for your sweet thoughts and prayers yesterday! thanks for your grace and understanding. i knew i needed to write it THAT DAY so it would be REAL. but it was hard to write...and even harder to live through! i was finally able to cry my eyes out and process through my heart with Pat last night and went to bed feeling very loved (thanks!) and a little lighter. today has been better...}
i was asked about our "breakfasts" around here...and since i just sat down with the kids and planned out our breakfasts and lunches, i thought i'd share.
i'm a "schedule" person. i also have a couple kids that are just better when they know what to expect. so this works for us...to eat the SAME thing every monday, etc.
in case you can't read it, or it isn't specific enough, here's the breakdown:
breakfast-
monday - toast with peanut butter and a smoothie (almond milk, frozen strawberries, bananas and greek yogurt)
tuesday - scrambled eggs and fruit
wednesday - sausage balls (no carb sausage balls....not the kind with bisquik)
thursday - granola (pumpkin flax granola that i buy in a box) and almond milk (this is new...and after 2 years of not eating cereal, they are loving it :-))
friday - fried rice - it's this recipe that i got in a magazine...using yellow basmati rice (the kind you'd have with indian food) with eggs cooked in it, garlic, bacon crumbled...sounds weird but they LOVE it and it's actually pretty easy as long as i remember to make the yellow rice for dinner a night or 2 before and just reheat it and add the other ingredients
lunch - they can add fruit and something else to this...
monday - salad with chicken, carrots, cucumbers, ...
tuesday - pepperoni and cheese wrapped in ham slices
wednesday - sandwich
thursday - pistachios
friday - Lara bar (a new friday treat ;-))
super simple and kinda healthy and it works for us. at least for now!

so....i just created this other little blog to keep track of lunches...'cause I love making them (and I only have the one kid to do it for). I made the blog just for me...as a place to document the lunches, but since you asked.... :)

We totally have a breakfast schedule too. Not a lunch one yet, but I'd love to streamline it. I'm a "wheat grinder", so we include more "breads" in our routine. Hard boiled eggs are a favorite for breakfast or lunch (along with other stuff). My issue is the massive amounts of food they want to eat all the time -- and I'm talking healthy, filling stuff! Hard to know how to limit them when they are skinny kids.
