Jan Karon wrote a series of fiction books called The Father Tim Series. I LOVED them all, they are light, easy and fun. Not the story line I would normally pick but I loved it.
Jan Karon, definitely! Trust me (& Holly above)-- I guarantee you will post a "Thank You" after reading the Mitford/Father Tim books. They're good for you brain (extremely well-written) and good for your soul (scripture-inspired).
Sophie Kinsella, author of the shopaholic series. I laugh so hard I cry sometimes. Take into consideration her books are not Christian based and have poor language (sometimes) but goodness gracious she is funny.

Karen Kingsbury - any of her books are SOOO good. But particularly the Redemption Series. LOVE them.
Hiding Place by Corrie ten Boom (the topic isn't light, but it's easy to read)
Twilight (hopefully I don't get deleted for this) - such good writing....
