making pumpkin muffins

we made pumpkin muffins this morning.
{complete recipe at the bottom of the post}

my 2 helpers.

watching the dry ingredients mix

helping with the can opener
{they really are getting to an age where they are actually helpful!}

add the wet ingredients

mix

put in muffins tins

almost done!

don't forget the topping!!!

Pumpkin Muffins

3 1/3 cup flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups sugar
4 eggs
1 1/2 cup pumpkin (i just use one of the small cans and don't measure it...)
1 cup oil
2/3 cups water

Combine all dry ingredients.
Add eggs, pumpkin, oil and water.
Mix with electric mixer until well combined.

Bake in lined muffin tins at 350 degrees for 15-20 minutes. Fill the tins full or a little less.

**After they have cooled, dip tops in melted margarine and then a sugar/cinnamon mixture (1/4 cup sugar to 1 tsp cinnamon)

This recipe makes AT LEAST 18 muffins! it makes a lot!!!

{i've eaten 3 of them today...ugh...but they were SO good!}

i also mixed up my russian tea {that will last me all winter}
it's really just sugar and tang with a little bit of instant tea and hot water :-)

and these apple bars are in the oven right now!
{taking them to dinner at a friends' house tonight!}

as soon as i saw the title of your post i gasped. will be making those very soon, but will most likely eat a heck of a lot more than 3 in a few hours (more like minutes). thanks for the recipe!!

by the way I have cut the recipe down to 2.5 cups of sugar and I am going to attempt 2 cups next time. Didn't notice much of a difference. I am tempted to try applesauce to replace some of that oil. (then I won't feel so guilty eating so many) YUM!

YUM. And speaking of Tang - I heard a baffling tip yesterday. Apparently, one scoop of it run through a cycle in your dishwasher will remove ugly brown calcium deposits. Who knew?

you're making me crazy! i'm trying to hold out for pumpkin to go on sale, but i don't know if i can handle it much longer!!!
