Sweet and Sour Crockpot Chicken

i have no idea where i got this - probably from one of you - but i can't remember, so sorry that i can't give you credit.

anyways, had this for dinner last night and it SMELLED so good all day and TASTED so yummy last night!

6 carrots, sliced
1/2 cup green pepper, chopped
1/2 cup onion, chopped
3 chicken breasts (i put 4 in so that we'd have enough to eat for tonight too)
1 tsp salt
15 oz pineapple tidbits - drained (i used chunks because walmart didn't have tidbits)
1 cup sugar
3 T oil
1 1/2 tsp ginger
4 T soy sauce
7 T cornstarch
1 cup water
2/3 cup cider vinegar

Cook on low 7-8 hours or high 3-4 hours. Serve over rice.

Tisha - what ingredients in this recipe would you alter?? just trying to be more aware of how to eat healthy!

That sounds so good!!! I am going to try it out. Love the crock pot!
I'm on the spot now with my alterations : ) Not like this recipe is not perfect just the way it is ;-)
I guess the only adjustments I will make for us is the organic cane sugar, and I will probably try it out with less than a full cup of it for sure. The cider vinegar is really great for you when it is raw, with the pulp in it, and I will most likely cut the oil too, or possibly try evoo in place of canola or veg oil. Then serve on regular brown rice. That's what I will try....Thank You! Copying it now.

YUMMY AGAIN WELL TRY IT THIS WEEK I HOPE...... THANKS MADE THE PUMKIN MUFFINS WELL TAKE SOME TO WORK AND A FRINDS HOUSE HOW IS OUT OF WORK... WELL EAT ONE IN THE MORNING......

looks good - may have to try that one. I agree with tisha - i'd work on the sugar part, but everything else looks good! :) Yum!
