i had a rough night in the kitchen the other night...i don't think you should attempt 2 new recipes at the same time. or at least i shouldn't.
i made her enchiladas.
they were yummy.
but i doubled the chicken and tortillas and didn't double the sauce..so they were a bit dry...but still yummy!
then i decided to make "snow pops" after seeing them on her blog.
but her directions weren't super specific or exact.
which i appreciate because that's how i cook.
but i think i messed it up.
anyways...you make a chocolate cake.
use one of those musher thingy's to mush it up...or a food processor i suppose.
{see...SO exact :-)}
make a cream cheese frosting {you could probably just open a tub of vanilla frosting also! that would have been much easier!} and mix 2/3ish of a cup into the mushed up cake.
then roll the cake/icing mixture into balls and put in the fridge.
stick lollipop sticks into the balls and dip into melted white chocolate that you have colored with food coloring and then sprinkle with sprinkles. except the white chocolate got all clumpy. so i melted chocolate chips and dipped them in that. and then the balls kept breaking off into the chocolate {maybe i didn't leave them in the fridge long enough??}
so i just drizzled melted chocolate chips on the second plate and skipped the lollipop sticks.
they still tasted the same!
the kids enjoyed them...
except for bailey.
she didn't finish her dinner so she didn't get one.

I made those a couple weeks ago. I actually froze mine over night. They were much easier to work with then.

I freeze mine as well. It does work much better.
the snow pops look super yummy...here is another one that we did that was super fun since we seem to have an overwhelming amount of snow (scott had to unbury - is that a word- our mailbox the other day!!):
snow candy
1 cup REAL maple syrup
1/4 cup butter
fresh, CLEAN snow (i used a pie plate full)
Heat the syrup and butter over med-high heat, stirring to avoid a boilover. The mixture is ready in 6-7 minutes after it boils. Remove from heat and coold for 2 minutes before pouring over the snow. it cools so quickly that kids can taste it right away. it has a consistency kind of like taffy. it was really sweet and rich but yummy!
ps...they make this in "little house in the big woods." so that is a fun connection!

I'm 'one of those kind of mom's' too. It's so hard sometimes, but they're worth it.
i meant to tell you...i have never had good luck with white chocolate chips melting "smooth". so i use white almond bark. it melts so much better and is great for dipping things.
