Sweet and Sour Chicken

i'm doing this post instead of what's really going on around here...how i only slept for about 2 minutes because of a scratchy throat that is the beginning of the cold that the 3 younger kids have...how i am just refusing to take my temperature because i don't want to know what it says...how poor little sawyer is still so sick and sad...how joshua cried at school yesterday because he had no voice and couldn't talk...nope. not talking about any of that :-) because we don't have the h1n1 flu and i'm so thankful.

this is one of our FAVORITE meals.
but it's not easy.
it has lots of ingredients.
and takes a lot of time.

but it's WORTH IT!

i always double (or triple or quadruple) the recipe.
if i'm going to go through all that work, i might as well!

this is what i bring most people when i need to bring meals.
i figure they've had enough casseroles and spaghetti!

and it freezes VERY well.

ok. first, take some chicken breast and cube them.
dip them in egg and then flour.

fry them up in some oil.

while that's cooking, make the sauce with these ingredients.
just heat it all up in a saucepan.

put the chicken in a 9 x 13 dish.
pour the sauce over it.
bake for 1 hr.

serve over rice.
YUM!

Sweet and Sour Chicken

3 chicken breast
1 tsp garlic salt
1/2 tsp pepper
1 beaten egg
4-6 T flour
3/4 C sugar
1/2 C vinegar
1 chicken bouillon cube
3 1/2 T ketchup
1 T soy sauce

Sprinkle chicken with garlic salt and pepper. Let stand for 1 hr. Dip chicken in egg and then flour. Heat oil and brown chicken. Put in baking dish and cover with sauce.

Sauce: Mix sugar, vinegar, soy sauce, chicken stock and ketchup. Heat in sauce pan and pour over chicken.

Bake uncovered 1 hr at 325 degrees. Turn chicken once or twice.

Serve over rice.

you told me you thought you had a bit of a cold....not that you didn't sleep at all because your throat hurt! you nut - go drink some juice and get some vitamins pumping in you!!! i'm saving this recipe and am going to try it...i think i have everything except the bouillon. yum!

NOOOOO!! i don't want you to get sick. i am so sorry for you and most of your sick family! my girls are on the mend now. i had it for the past two days. i just laid on the couch with fever/chills and all over achiness. no fun! i am starting to feel a little better now but still NO energy! i am praying for you and that you are able to get healthy FAST!! the recipe looks yummy. now i just need the energy to make it.

When you double or triple a batch you can always send some across the street!! We never turn down food!
