Gazpacho Salad

i am really growing up.
finally.

this is my new FAVORITE thing to make!
i have to have it ready in the fridge at all times.
i love to snack on it!

lots of fresh veggies, cilantro, and lime!

you just chop it all up, stir, and...

EAT!!!

Gazpacho Salad

Chop:
3 tomatoes
1 cucumber
1 green pepper
1/2 red onion
one handful cilantro

toss with:
3 tsp olive oil
salt/pepper
juice of 1 lime

EASY and YUMMY!!!

YUMMMMYYYY ..... Guess who has all those ingredients in her fridge and will make that tomorrow?? I can get so much fresh produce here and never have enough recipes to know what to do with it all... so now I do! Thanks Courtney! I've been keeping up with your blog tons more lately.. a.k.a. Greek Salad.

add some feta and kalamata olives and that is what we ate all over Crete a few years ago - just by a different name.
I eat it about 4 times a week for lunch since!

Looks yummy will have to try, less onions of course because of the allergies Michael has but looks awesome.

Hey! I've been making a "Summer Salad" every couple of days lately - tomatoes, cucumbers, a can of whole corn and avocado...with Good Season's italian dressing over it!

Thanks for this variation...I'm gonna make it this weekend!

Hey Courtney! I just made that salad for one of the families that lost their husband/father in the plane crash... I was on dinner duty and was trying to think of something fresh to make and I made it for them... haven't heard if they liked it yet but I LOVED it! :)

oh and as Holly said add the feta and the olives and it is a greek salad here too... I always get it when we got out. They dont have salads with lettuce here...
