made my first batch today. they are the BEST. (don't forget the topping - that is really what makes them SO yummy!)
Pumpkin Muffins
3 1/3 cup flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups sugar
4 eggs
1 1/2 cup pumpkin (i just use one of the small cans and don't measure it...)
1 cup oil
2/3 cups water
Combine all dry ingredients.
Add eggs, pumpkin, oil and water.
Mix with electric mixer until well combined.
Bake in lined muffin tins at 350 degrees for 15-20 minutes. Fill the tins full or a little less.
**After they have cooled, dip tops in melted margarine and then a sugar/cinnamon mixture (1/4 cup sugar to 1 tsp cinnamon)
This recipe makes AT LEAST 18 muffins! it makes a lot!!!
YUM!

Yum, yum, yum! Thank you for sharing your fabulous fall treat with us. They are all gone already and were deeeeelicious! So glad you posted the recipe. Thanks for that too!
Thanks for sharing as well. Tim and Meghan loved them. They devoured them very quickly.
i have always wanted the recipe. thanks
I was just looking at this recipe last night from you (I already had it in my cookbook) and am planning to make them for our guests this weekend. It's my first time so wish me luck!
You gave me this recipe years ago and I make them ALL the time. I know the recipe makes at least 2 dozen - usually more. It's a good thing too, because we eat them SO fast! I do them often with 1/2 sugar and 1/2 splenda, since it calls for so much - they are delish!!!
I made these tonight and I ate a whole muffin and a half before they cooled. They are SO good, I decided to give them all away because I fear I will eat them all myself. Thanks for the recipe. They are delicious!
i made them and were great took to a friend and to work today and well talk more tomorrow i got 24 out of my batch.....
So good......
