GREAT day! my neighbor, Remi, took me to Panera for lunch for my birthday - YUM! AND we left our kids at her house with a babysitter - even better!
this afternoon, the kids and i walked to "the duck pond." it was a beautiful afternoon!
i don't really like this picture of me. but it cracks me up, because i set the camera on the edge of the little dock and set the timer. during this picture, each kid is complaining or saying something, "i can't see" "the sun is in my eyes" "i have to potty!" yet, it turned out decent. funny.
ok. dinner. new recipe. YUM! the kids actually ate it ok. MADE them eat some of the veggies - but they didn't complain as much as they do about some veggies (could also have been that we're in "smack down" mode around here...
recipe below:
Creamy Pasta Primavera
3 cups penne pasta, uncooked
2 T italian dressing
1 1/2 lb. boneless chicken breasts, cut into chunks
2 zucchini, cut into chunks
1 1/2 cups cut-up fresh asparagus
1 red pepper, chopped
1 C chicken broth
4 oz Neufchatel cheese (by the cream cheese)
1/4 C parmesan cheese
Cook pasta as directed on package.
Heat dressing in large skillet on medium heat. Add chicken and veggies; cook 10-12 min. or until chicken is cooked through, stirring frequently. Add broth and Neufchatel cheese; cook 1 min. or until cheese is melted, stirring constantly. Add Parmesan cheese; mix well.
Drain pasta, return to pot. Add chicken and veggie mixture; toss lightly. Cook 1 min. or until heated through. Sauce will thicken upon standing.
Makes 6 servings.
